Seven private days of Moroccan flavours: medina food walks, a cooking class in Fez, Berber cooking in the Sahara and grilled fish in Essaouira.
This Morocco food tour follows the taste of the country from north to south in 7 days. You start with an evening food walk in the old medina of Fez and a market visit with a local cook, then a cooking class where you prepare pastilla, tajine and salads. In the Sahara, a Berber family in Khamlia shows you how to bake madfouna, the stuffed bread of the desert. The trip ends with street food in Marrakech and grilled fish at the port of Essaouira.
The tour is fully private: only your group, your own driver and a comfortable vehicle. You can start on any day, and we adapt the menu to vegetarian, halal or allergy needs. Before you travel, read our guide to cooking classes in Morocco. You can also book a single Moroccan cooking class or a Marrakech evening food walk, or change the whole route in a tailor-made trip.
Day 1
Your private driver meets you at Fez airport or the train station and takes you to your riad in the old city. In the evening a local food guide walks with you through the lanes of the medina. You taste harira, the tomato and lentil soup of Morocco, warm msemen pancakes with honey, a cup of spicy snail broth and fresh sweets from small family shops. You see how people in Fez eat every day, far from the big restaurants. Night in Fez.
Overnight: Fez
Day 2
In the morning you meet a local cook and go shopping together in a food market: vegetables, olives, preserved lemons, fresh herbs and spices. Back in the kitchen, you join a Moroccan cooking class and prepare a pastilla, a tajine and several cooked salads. Then you sit down and eat what you cooked. In the afternoon a licensed local guide shows you the medina of Fez: the tanneries, the old schools, the copper workers and the communal bread ovens. Second night in Fez.
Overnight: Fez
Day 3
After breakfast you cross the Middle Atlas and stop in Ifrane, a clean mountain town with cedar forests nearby. At lunch time you reach Midelt, a region known for its apples and mountain trout. In the afternoon the road goes down the Ziz valley to the Sahara. In Merzouga a camel takes you into the dunes of Erg Chebbi at sunset. Dinner is a slow-cooked tajine in the desert camp, with music around the fire. Night in Merzouga (dinner included).
Overnight: Merzouga (Erg Chebbi)
Day 4
Watch the sunrise from a dune, then have breakfast. In Khamlia, our home village, a Berber family welcomes you into their house. You knead the dough and help to prepare madfouna, a large bread stuffed with meat or vegetables, onions and spices and baked in a clay oven. The family also shows you the mint tea ritual. In the afternoon you visit the market of Rissani, with its spice stalls, dates and old donkey parking. Second night in Merzouga, with dinner included.
Overnight: Merzouga (Erg Chebbi)
Day 5
You drive west past palm groves to the Todra Gorges and walk between the high rock walls. On the road you taste local dates and almonds from the oases. In the afternoon you reach the Dades Valley, with its red rocks and old kasbahs. Dinner is served in your kasbah hotel: soup, tajine or couscous and fruit. Night in the Dades Valley (dinner included).
Overnight: Dades Valley
Day 6
After breakfast you visit Aït Ben Haddou, the famous earth village, and cross the High Atlas by the Tizi n'Tichka pass. You arrive in Marrakech in the afternoon. In the evening a local food guide takes you around Jemaa el-Fna and to small local stalls away from the busy tourist grills. You try tanjia, the slow-cooked meat of Marrakech, fresh juices, sweets and mint tea. Night in Marrakech.
Overnight: Marrakech
Day 7
You leave Marrakech for the Atlantic coast. On the way you stop at a women's argan oil cooperative and see how the women crack the nuts and press the oil; you taste amlou, a spread of argan oil, almonds and honey. In Essaouira you walk to the fish market at the port, choose your fish and eat it grilled at a simple stall. The tour ends in Essaouira, or your driver takes you back to Marrakech in the evening.
